Vegan Green Salad

Ingredients

1 pack Violife Just Like Feta

2 cucumbers, ribboned

3.5 oz Tricolore cherry tomatoes

3.5 oz fresh kale leaves, chopped

3 tsp pitted olives

2 green onions, sliced

2 tsp fresh oregano leaves

Fresh mint leaves

3 Tbsp extra-virgin olive oil

2 Tbsp balsamic vinegar

½ tsp cracked pink peppercorns, to taste

Salt, to taste

Prep Time: 10 minutes

Serves: 4

Directions

Chop kale into small pieces. In a big mixing bowl, add cucumber, cherry tomatoes, kale, olives, onions, oregano, and mint leaves.

Chop Violife Just Like Feta into squares of 0.4in and add to the salad. In a jar add olive oil and balsamic vinegar and shake well. Drizzle over the salad and sprinkle with pink pepper and salt.

Recipe - Creamy Mayo-Free Broccoli Salad

INGREDIENTS

1 medium head broccoli, cut into bite-size florets (about 5 1/2 cups)

4 slices Organic Prairie Bacon, crisp-cooked and chopped

1/4 cup finely diced onions

1/3 cup organic raisins

1/4 cup sunflower seeds, preferably dry roasted or salted

3/4 cup Organic Valley Plain Grassmilk Yogurt

3 tbsp apple cider vinegar

1/2 tsp garlic powder

1/2 tsp salt

pinch of black pepper

INSTRUCTIONS

1. Place broccoli florets, onions, and raisins in a large bowl.

2. Whisk together Organic Valley Plain Grassmilk Yogurt, 

apple cider vinegar, garlic powder, salt and pepper. Taste and adjust seasons.

3. Pour dressing over salad and toss well to coat.

4. Stir in Organic Prairie Bacon and sunflower seeds just before serving.
